Bahn Mi Sandwich
This is just for a future reference for me. Since I have cut red meat and of protein out of my diet I needed something to break up the monotony of eating salads everday. My diet mostly consists of veggie sandwiches from Subway and Jimmy Johns. When I was really young a waitress at my work would always bring me a Bahn Mi from some place in Windsor. A nice little Canadian city SOUTH of where I live in Michigan.
Here is a website that has a ton of recipes for Bahn Mi including the vegetarian variation that I have been looking for. The main thing I was looking for is the pickled carrot and daikon part of the sandwich which could also be used as a side dish with rice.

Recipe for picked carrots and daikon:
1/2 lb. carrots -shredded in food processor, sliced in thin rounds or thin match-like strips.
1/2 lb. daikon radish – cut same as carrots.
3 cups warm water
3 Tablespoons distilled or rice vinegar
2-3 tablespoons sugar, depending on how sweet you want your pickles
2 tablespoons salt
1. Mix warm water, vinegar, sugar and salt until everything is dissolved. Choose a pitcher or bowl with a lip that can be used for pouring mixture.
